Ondeh Ondeh Cakes
Ondeh Ondeh cakes are a popular kueh. Made with original and
natural ingredients, this dessert is a must have. The top three ingredients
required to make this delicious cake are
- Pandan
- Gula melaka
- Coconut (shredded)
Ondeh ondeh is not only popular flavor for cakes but is also
added to other sweet and savory dishes. And so, there are many other ideas for
ondeh ondeh dishes. However, we will discuss our personal favorite first. So,
let’s see what makes these cakes so special.
Pandan sponge cake base
Ondeh ondeh cakes use a pandan sponge cake base for the
cake. Pandan is a leaf that gives the cake that vanilla and coconutty flavor.
It can be very commonly found. You can also use frozen pandan leaves in case
you don't get the fresh ones. Pandan is
added to the sponge of the cake as an ingredient that enhances the flavor
further. Almost every ondeh ondeh cake's base is green in color. This color is
due to the green food color that is added to the sponge batter. Rice flour is
another ingredient that gives the cake that moist and soft texture.
Gula Melaka (palm sugar)
Gula melaka is another ingredient that makes this cake so
amazingly special. Gula melaka can be boiled with water or individually to
produce a brown thick syrup. This syrup is added along with butter cream on the
base of the cake to further enhance the flavor of every ingredient. Gula melaka
also gives the cake that extra crunch. White sugar and gula melaka are two
different things. Unlike plain sugar, gula melaka gives off a smokey scent and
flavor when cooked.
Pandan Butter cream
To further make this amazing treat more delicious, butter
cream or pandan butter cream is used to decorate the cake with. Sometimes
coconut buttercream is also used. This buttercream gives the cake that amazing
taste. It is either paired with gula melaka or both are spread separately
between and on the top of the cake. This pandan butter cream brings out the
flavor of the vanilla sponge base.
Coconut
There are many different ways to use coconut in ondeh ondeh
cake. Sometimes coconut flour is used to make a sponge base. Pandan, when used
with coconut flour to make a sponge base further, enhances that coconutty and
vanilla flavor. Sometimes coconut flakes are spread between the sponge and on
top of it separately. Coconut flakes may also be added in the butter cream
making the cream more coconutty in flavor. Lastly, coconut flakes can be used
to decorate the cake entirely.
